This is one of those recipes that I have been making for at least 15 years. (Now I feel really old.) It was one of the very few things I could make as a newlywed. I don't make them nearly as often as I did in our early years, but they are still a favorite. I have tweaked them, and made several versions by changing up the filling, but this version is a favorite for my picky eaters.
Cheesy Chicken Bundles
3 oz. cream cheese, softened
2 tablespoons milk
1/2 cup shredded cheddar cheese
2 cups cooked cubed chicken (I recommend heavily seasoned or rotisserie)
2-4 tablespoons melted butter
1/2 cup seasoned bread crumbs
1 tube crescent rolls
Makes 4 servings.
Beat cream cheese and milk in a mixing bowl until smooth. Add cheddar cheese and chicken to the cream cheese mixture and stir with a spoon. Open the crescent roll tube and separate the rolls into 4 rectangles. You will need to press 2 triangles together to seal and make a rectangle. Add 1/4 of the mixture to the center of each rectangle. Bring the 4 corners to the top to make a bundle. You may need to seal seams around the bundle with your fingers if they come undone. Top each bundle with melted butter and bread crumbs. Bake at 350 for 20-25 minutes or until golden brown.
I normally serve with a side of rice and a vegetable or salad.
Other versions include:
Chicken Pot Pie Bundles - (sub 1/2 - 1 cup of cream of chicken soup for the cream cheese and milk and add a 1/2 - 1 cup of veggies
Cheesy Chicken and Broccoli Bundles - same as above, add 1/2 - 1 cup of steamed broccoli
